Nourishing Tomato Sauce Ingredients
- 8 (eight) diced ripe Italian tomatoes with skin and seeds
- ½ (half) seedless red bell pepper
- ½ (half) grated medium carrot
- ½ (half) grated beetroot
- 1 (one) chopped medium onion
- 1 (one) small cooked yam
- 2 (two) crushed garlic cloves
- ¼ (a quarter) teaspoon of turmeric powder
- 1 (one) cinnamon stick
- 1 (one) fresh bay leaf
- 2 (two) tablespoons of olive oil
- ½ (half) teaspoon of salt
- 10 (ten) fresh basil leaves (for finishing)
- Black pepper to taste
Preparation Mode
Heat a pan over medium temperature, add the oil and sauté the onion with the cinnamon stick, bay leaf and turmeric until wilted, then add the garlic and sauté for 1 more minute.
Then add the bell pepper, carrot, beetroot, tomatoes and cooked yam.
Then mix, season with salt and cover the pan.
Do not add water, however!
Finally, open to mix from time to time and after 5 minutes of cooking, remove the cinnamon stick and cook until the tomatoes and other ingredients are very soft. So, almost melting.
After approximately 10 minutes, turn off the heat, remove the bay leaf and wait to cool down a bit.
Then add the basil leaves and blend everything in the blender.
Then do this in 2 steps so you don’t strain the appliance and protect yourself in case the sauce is still hot.
Finally, return the sauce to the pot and adjust with salt and pepper if needed.
